Italian Bean Salad

Ingredients

15 to 20 pepperoni slices, diced

15 to 20 Italian dry salame slices, diced

1-15 oz can chickpeas, drained and rinsed

1-15 oz can cannellini beans, drained and rinsed

1/2 red bell pepper, diced

1/2 green bell pepper, diced

1/3 cup feta cheese

1/4 cup Italian dressing

store bought or homemade

1/2 tsp salt

A must have side that acts more like a main, this Italian marinated bean salad is bursting with bright and vibrant flavors.

Directions

  1. In a large bowl mix all ingredients together. Cover and place in refrigerator for at least an hour before serving.
