Pepperoni Rolls

Ingredients

1 tsp. rapid-rise yeast

3 cups all-purpose flour

2 tsp. coarse salt

1 cup warm water

2 tbsp. olive oil

plus a little extra for the bowl

30 pepperoni slices

1 cup shredded Mozzarella cheese

1/4 cup grated Parmesan cheese

1 1/2 tsp. fresh oregano leaves

1 egg

beaten

These pepperoni rolls are bursting with flavor in every bite. Great for a laid-back Friday night or a deliciously savory snack for the family.

Directions

  1. For the dough: Add 1 1/2 cups flour 2 tsp. salt and yeast in a bowl and stir. Add water and 2 tablespoons of olive oil. Mix slowly adding the remaining flour until it becomes too thick to stir. Knead for 10 minutes. Place dough in a greased bowl cover and let rise for 1-2 hours.
  2. For the pepperoni roll: Preheat oven to 375°. Lightly grease baking sheet.
  3. Roll dough out into a rectangle 1/4 inch thick. Layer pepperoni slices Mozzarella and Parmesan cheese on the dough leaving 1/2 inch on all sides. Garnish with oregano.
  4. Roll up the dough lengthwise and cut in half. Pinch ends and seal. Place seam side down on prepared baking sheet and brush dough with beaten egg.
  5. Bake 30-35 minutes until golden brown.
