Ingredients
1 tsp. rapid-rise yeast
3 cups all-purpose flour
2 tsp. coarse salt
1 cup warm water
2 tbsp. olive oil
plus a little extra for the bowl
30 pepperoni slices
1 cup shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
1 1/2 tsp. fresh oregano leaves
1 egg
beaten
These pepperoni rolls are bursting with flavor in every bite. Great for a laid-back Friday night or a deliciously savory snack for the family.
Directions
- For the dough: Add 1 1/2 cups flour 2 tsp. salt and yeast in a bowl and stir. Add water and 2 tablespoons of olive oil. Mix slowly adding the remaining flour until it becomes too thick to stir. Knead for 10 minutes. Place dough in a greased bowl cover and let rise for 1-2 hours.
- For the pepperoni roll: Preheat oven to 375°. Lightly grease baking sheet.
- Roll dough out into a rectangle 1/4 inch thick. Layer pepperoni slices Mozzarella and Parmesan cheese on the dough leaving 1/2 inch on all sides. Garnish with oregano.
- Roll up the dough lengthwise and cut in half. Pinch ends and seal. Place seam side down on prepared baking sheet and brush dough with beaten egg.
- Bake 30-35 minutes until golden brown.
